Betty Crocker Fun-da-Middles: How-to, Review + Giveaway!

So the nice people at MyBlogSpark sent me this. A baking challenge! I thought, “Yum cupcakes…with creme in the middle?  Like a ding-dong…cool!”  Time to bake, Gracie ;)

 

All you need is the Betty Crocker Fun-da-Middle mix (here’s an $0.85/1 coupon!)  2 eggs, 3/4 cup of water, and 1/3 cup of oil.

 

 

Preheat your oven to 350 degrees. Then,  mix all the ingredients, (except the contents of the mystery foil pouch) with a hand mixer for 2 minutes on low speed.

 

Line a muffin tin with 12 cupcake liners and spoon the mixture in so that each cup is about 1/3 full. It’s a good idea to read the instructions before you start as I found out ;) . Don’t be like me and get halfway through and think, “there’s going to be a lot of batter left!”  Trust me, 1/3 full.  You’ll need the extra batter for the last step.

Take the mystery pouch and squeeze it 20 times. Cut off an end and try it. Kind of like vanilla marshmallow fluff, yeah?

Begin squeezing the creme from the foil pouch into the center of each cupcake. This is where it gets tricky. First, make sure that you don’t touch the sides of the liner.  And second, ration the creme so you’ll have enough to fill all 12 cupcakes (I started off sparingly, then became overly generous in the middle row, before pulling back for the final row as I was running out.)

 

Now, take the rest of your batter and spoon it on top of the creme to form a nice seal with each cupcake. You’ll see that some of my cupckaes are bit petite. Yeah, I ran out of batter and had to scrape the sides.

 

 

So they’re in the oven now for 24-29 minutes.  The process of making them was a bit challenging, but had I read the box and thought about what I was doing, I think it would have been easier. Or maybe watch the Betty Crocker How-to Video . It’s all about ratio, people! ;)

Okay…taste test! I have to say the middle creme is really good! Even better baked then straight from the package.  But, do wait the 20 minutes before you try one, The creme holds alot of heat!  The cupcake itself is very moist, probably coming from the moisture from the creamy center.No frosting is needed, but maybe a little decoration might make them a bit more festive. I like ‘em and they were a big hit with the kids!
